Young coconuts are harvested six to seven months after the fruit has emerged.
What Is a Mature Coconut?
A mature coconut has been on the tree for at least 12 months. The water inside is less sweet, and the meat is harder than on a young coconut. Some say mature coconuts have a more earthy flavor, while others find them to be more bland — which is why we do not use them. Unlike young coconuts, they have a brown outer shell and white flesh.
